Chef Narisawa Yoshihiro serves nature on a plate. His restaurant, NARISAWA, has two Michelin stars and has been on “The World’s Fifty Best Restaurants” list, the culinary equivalent of the Academy Awards, for over ten years in a row. Drawing inspiration from the landscapes and plentiful ingredients of satoyama environments—rural mountain areas where people live off the land in harmony with nature—he has created a new genre called “Innovative Satoyama Cuisine.” He shares his roots and the future that he is moving towards.
